Recipe
- 2 Halves boneless chicken breast
 - 1 Lemon
 - 2 Egg Whites
 - 1 Packet ITG Pancake Mix
 - Salt & Pepper to taste
 
Lemon Chicken Directions
- Preheat oven to 350 degrees
 - Whisk egg whites and juice of 1/4 lemon in a bowl large enough to dip the chicken
 - Place pancake mix and seasoning in another bowl
 - Dip the chicken in the egg white and then the pancake mix
 - Sauté chicken in a non-stick fry pan until lightly brown on both sides
 - Place pan in oven until chicken is done
 - Squeeze desired amount of lemon over chicken and serve immediately
